Purple Lemonade Popsicle

I love lemonade. And i’m a huge sucker for beautiful colours, and the eye-catching blue-to-purple change while preparing this popsicle is no exception. It’s a delicious, citrusy, ice cold delight fit for you, a human, probably sweating, and need a cool-down.

Purple Lemonade Popsicle Recipe

3 cups (237ml) water
1 cup (200g) sugar
15-20 pieces butterfly pea flowers
1 cup (237ml) lemon juice

Bring water, sugar, and butterfly pea flowers to a boil in a large pot. Simmer for 5 minutes, making sure all sugar is dissolved. Strain and discard butterfly pea flowers. Let liquid cool. Add 1 cup lemon juice, and pour liquid into a popsicle mould according to its instructions, leaving a 1/2 inch gap at the top for room for the liquid to expand. Add popsicle sticks. Freeze for 24 hours. Remove from popsicle mould and enjoy!

This recipe can also be made in ice cube trays or other other moulds, or just keep as a liquid and enjoy over ice.
